Beginner's Box: Almost instant bread

Quick bread is baking without the time-consuming kneading and rising of dough. The leavening agent is baking powder or baking soda, not yeast. This technique includes biscuits, popovers, muffins, rolls and loaves.

PUMPKIN QUICK BREAD

1 cup butter or margarine, softened
1 1/3 cups sugar
3 eggs
3 cups flour
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground nutmeg
1 16-ounce can pumpkin (not already spiced pumpkin pie filling)

Mix butter and sugar until uniform. Whisk in eggs. Combine dry ingredients and stir into mixture just until moistened. Stir in pumpkin. Pour into two greased 9-by-5-by-3-inch loaf pans. Bake at 350 degrees for 1 hour or until bread tests done with a toothpick.
