Vikram Singh came to the United States June 8, 1999, to pursue an engineering degree at Northwestern University.
Within a week, he was doing the cooking for himself and his roommates, who had no talent in the kitchen. Singh cooked; the roommates did the dishes.
He got his degree, moved successfully in the corporate world and dreamed of running his own restaurant.
That dream came true in October when Singh and his wife, Agnieszka, opened Kama Indian Bistro at 8 Burlington Ave., La Grange.
“Frankly, I always wanted to be in business,” Singh said. “The only business I really knew was the restaurant business. I was looking for a good location, good demographics, affordable rent. La Grange is perfect because this downtown is blossoming, and there is no Indian restaurant for miles.”
Featured are the recipes of Singh’s father, Manmohan, a celebrated executive chef in India, who has worked for several five-star hotels. “Chef Moni” has cooked for the late Indian Prime Minister Indira Gandhi, Swedish Prime Minister Olaf Palme, the amir of Kuwait, Chancellor of Germany Helmut Kohl, the Shah of Iran, King Abdullah of Jordan and many “Bollywood” film stars.
Singh, who spends a great deal of his time managing the business, shares cooking duties and has some favorites he likes to prepare as well.
“I love to cook lamb or goat Biryani — it takes a lot of patience,” he said. “To cook it the right way takes three or four hours. Every time my father makes it everyone raves.”
