Should you sauté with butter or oil?

Butter with 80 percent fat tastes better than oil, but it is not a good choice for those on a diet or who must limit their cholesterol. It also often will scorch before food is cooked.

Vegetable oil is less delicate, with a higher scorching level. Olive oil helps control bad cholesterol (LDL) while raising levels of good cholesterol (HDL).

It’s not necessary to ignore butter in cooking, but it should be used judiciously.
