He added The Eating Well is phasing out gluten from all of its menu selections to meet customers' desires. He also wants to start selling fish.
"I have a passion for food – good quality food, raised right," Sikorski said.
The Eating Well also participates in several farmers markets, including indoor ones during the winter months. Staff attend markets in Hinsdale, La Grange, Western Springs, Wheaton, Evanston, Grayslake, Palatine, Palos Heights, Woodstock and Kenosha, Wis., where they prepare food and sell retail products such as giardiniera and cookies. They also buy produce directly from farmers at the markets.
"In most of our markets, we're a double tent – the size of a farmer's tent," Sikorski said.
