ELMHURST – Members of Elmhurst Memorial Healthcare's Wildflower Café cooking staff won a national culinary competition.
Executive Chef Jim Roth and lead cook, Yanka Manikatova, took home the gold medal during the Association for Healthcare Foodservice's 2013 Culinary Competition this month. Their goal was to create an original and healthy dish using Basic American Foods-PotatoPearls Natural Mashed Potatoes.
The team mixed goat cheese in with the potatoes to create a cake which rested on a crab and corn masque choux. New Orleans-style barbecue shrimp with Abita amber ale glaze and pineapple compote finished off the dish.
Aside from taste, the award-winning meal also had to meet nutritional guidelines, cost less than $7 to produce and be appropriate to serve in a facility on regular menu rotation including retail, catering or patient feeding.
